    I graduated in 2015 with a B.S. in Exercise Physiology and am now in the Doctorate of Physical Therapy program here at CSS. I played on the baseball team at CSS for four years. I was also a statistics tutor and currently work as personal care assistant in Duluth. I love the outdoors, hunting fishing, hiking, etc. While being at St. Scholastica I have noticed the “family” atmosphere and I am truly enjoying every second of it.

Betty’s Pies and Beijing

A quick food update for you if you’ve been away or are new to the area…Beijing is back and Betty’s Pies has never left us!

Beijing is a wonderful Chinese restaraunt that had been closed for multiple years and is finally reopened down on London Road near KFC. They are famous for their delicious and cheap lunch specials with so much food you have at least 1 meal to take home with you once you are full. I recently had Beijing and order the General Tso’s Chicken with fried rice and an egg roll – all the food lasted me 3 meals!

Betty’s Pies up in Two Harbors is still cooking up those always-delectable fresh pies to go along with their home-cooked menu. I was up at Betty’s a little over a week ago for breakfast and I had one of my favorites – Biscuits and Gravy with a over easy eggs and toast, and of course coffee. My girlfriend and I split a strawberry rhubarb piece of pie before we left!

If you’re looking for a fairly cheap Chinese lunch special or carryout be sure and give Beijing a try this year! And if you are traveling up the north shore, Betty’s Pies is a must to stop in and dine! Heck, even take a pie to go to enjoy later!
