    Caitlin's Bio:
I’m an Advertising/Public Relations major with a concentration in production and design. I’m also minoring in management and marketing. I’m a social media assistant here at the College and love every second of it. Not only does it involve hands on experience in my major, but sets a great foundation for my future. I love to go out in Duluth and spend a lot time with some of my best friends and family. St. Scholastica has made such a huge impact on my life and I wouldn’t trade it for anything!

New Meal

Tonight I decided to try and make something I haven’t tried before. I LOVE french onion soup. Soooo good. I really have been wanting some like practically every night, but that hasn’t happened. I was deciding on if I wanted to make some in my crock pot since I’m an avid user. It seemed like it would be quite the process and after all, I’m all for quick and cheap meals. I ended up making a french onion soup casserole instead. It was pretty simple, fast, and quite cheap. It calls for about 4 medium yellow onions, soup, soy sauce, milk, swiss cheese, and french bread. I really, really liked it. I wish the cheese had been a little more brown though. It makes a ton of food so this meal will definitely last you. I would really recommend just making this once you’re living in the apartments. With the amount of chopping it’s definitely more of a meal that would require more stuff compared to a crock pot. If you like french onion soup definitely try this! It’s different and easy to make.
