    I’m an Advertising/Public Relations major with a concentration in production and design. I’m also minoring in management and marketing. I’m a social media assistant here at the College and love every second of it. Not only does it involve hands on experience in my major, but sets a great foundation for my future. I love to go out in Duluth and spend a lot time with some of my best friends and family. St. Scholastica has made such a huge impact on my life and I wouldn’t trade it for anything!

Cheeseburger Rice :)

One of my all time meals is cheeseburger rice! It’s so good and it’s so filling. I just love it. I would recommend trying to make it. It’s super easy, especially for college students.



Cook 1lb of ground turkey or beef and 1 small chopped onion on medium heat until the meat is done.

Drain the fat. Add 2 cups of water, 2/3 cup of ketchup, 2 tbsp of mustard and salt and pepper in the pan.

Turn the heat up to high until the water is boiling. Stir in two cups of rice (heaping).

Cover and let it sit for 5 minutes.

Fluff up the rice with a fork and cover the top with cheese. I use cheddar cheese. Replace the lid for about 10 minutes so it has time to melt.

After that melts, it’s all done! I add extra salt and pepper to mine along with more ketchup. 🙂
