    Amanda's Bio:
    I grew up in the Twin Cities, but now live up in Ely, MN near the BWCA, where my family has been for the last 7 years. I have three brothers, who I adore, and I enjoy fishing, playing basketball, and rough housing with them whenever I can. My mom has been a daycare provider since I was born, which served as inspiration for me to pursue a degree in Elementary education. I also love to paint, draw, and DANCE! I have been dancing for twenty years and am a dance instructor in Superior, WI....I can't imagine a life without it!

Thinking Fall? Yummy College-friendly Recipes!

It’s that time of year again (my favorite time of year, might I add!).  Pumpkin patches, apple orchards, and Halloween fun!  I thought it might be fun to share a couple tasty fall treat recipes to get you in the spirit. 

Oreo Caramel Apples

  • 4 whole apples (Any kind)
  • 4 popsicle sticks or skewers
  • 1 pkg of caramel candies, unwrapped
  • 2 tbsp of water
  • 10-12 Oreo cookies, crushed

Place caramel candies in a microwave safe bowl with water.  Heat on HIGH for 30 second intervals, stirring occasionally.  Push a stick into the bottom of each apple.  Coat each apple with melted caramel and then roll in crushed oreos.  Place on waxed paper or another non-stick surface to cool.  Store in refrigerator for up to two days.

Chocolate-Pumpkin Milkshake

  • 2 cups chocolate ice cream
  • 2/3 cup evaporated milk (whole milk will also work)
  • 1/2 cup pumpkin pie filling
  • 1 tsp pumpkin pie spice (optional)

Put all ingredients in a blender and blend until smooth.  Pour into glasses, top with spice.   Makes two 8 oz glasses.
