    I grew up in the Twin Cities, but now live up in Ely, MN near the BWCA, where my family has been for the last 7 years. I have three brothers, who I adore, and I enjoy fishing, playing basketball, and rough housing with them whenever I can. My mom has been a daycare provider since I was born, which served as inspiration for me to pursue a degree in Elementary education. I also love to paint, draw, and DANCE! I have been dancing for twenty years and am a dance instructor in Superior, WI....I can't imagine a life without it!

Quick and Easy Finals Recipes

Are you so busy that you don’t have time to cook?  During your study sessions the last couple of days, have you resorted to ordering Jimmy Johns, Erbs and Gerbs, or Dominos for at least two meals?  We all do it…but there are ways to make quick meals for yourself with little effort and without breaking out the wallet constantly. 

Breakfast is of course a highly important meal of the day (and the most often skipped).  However, it will help to get your mind functioning properly and stimulate more intense thought for those tests.  Some quick and simple recipes for this important meal follow:

Bagged Breakfast-

  • 1/3 cup MultiGrain Cheerios
  • 1/3 cup Wheat Chex
  • 1/4 cup Craisins
  • 1/4 cup Raisins
  • Handful of Peanuts, Cashews, or Pecans

Throw in a plastic bag, toss, and enjoy.  Simple and super good for you.

Instant Breakfast Pizza-

  • 1 English Muffin
  • 4 Tbsp Prego
  • 1/4 cup Mozzarella or Cheddar cheese

Toast english muffin.  Spread 2 tbsp of sauce on each side.  Top with cheese.  Place in microwave for 45 sec-1 min.  Enjoy!

Main Meal/Lunch ideas:

Feeling super drained?  Try this one to jazz up your boring Chef Boyardee

Spaghetti-Os Caliente-Style-

  • 1 can of Spaghetti-Os pasta (or raviolis would also work)
  • 1/2 can Hormel Chili
  • Red Onion to taste
  • 1/4 cup Cheddar or Jalapeno Cheese

Mix Os and chili together in a microwave-safe bowl.  Heat for 1 minute, stir, and add diced red onion.  Heat an additional minute, add cheese to top.  Finish off with another 30 seconds and it’s ready for tasting!

BBQ Chicken Pizza-

  • 1 Pillsbury Pizza Crust
  • 1 can Chunk Chicken Breast
  • 1 1/2 cups of KC Masterpiece or Famous Daves BBQ
  • 2 cups Mozzarella Cheese

Preheat oven to 400 degrees.  Unroll dough and lay out on pizza pan.  Drain chicken breast and in a mixing bowl, stir together chicken and BBQ sauce.  Spread mixture out on dough.  Top with Mozzarella Cheese.  Bake for 15-20 minutes or until edges are brown.  Yummmy!
