    I grew up in the Twin Cities, but now live up in Ely, MN near the BWCA, where my family has been for the last 7 years. I have three brothers, who I adore, and I enjoy fishing, playing basketball, and rough housing with them whenever I can. My mom has been a daycare provider since I was born, which served as inspiration for me to pursue a degree in Elementary education. I also love to paint, draw, and DANCE! I have been dancing for twenty years and am a dance instructor in Superior, WI....I can't imagine a life without it!

Cookie Time!

One of the reasons that I love the Christmas holiday is for cookie baking.  At very few other times of the year do I spend so much time in front of the oven baking lots of delicious treats, and I feel like it puts you in this really happy, zen place each time you are!  Yesterday I made the very first batch of the year, and of course you have to make Chocolate Chip first!

I used a new recipe that I came upon, and the primary base for the recipe instead of flour, baking soda, and salt is actually Bisquick!  It may sound strange, but it works amazing well and the cookies taste AMAZING.  They are chewy and soft in the middle and don’t dry out nearly as fast as the traditional recipe.

Bisquick Chocolate Chip Cookies

1 stick of butter, softened
1 cup of brown sugar
2 tsps vanilla extract
1 egg
2 3/4 cups of Bisquick
1 package of chocolate chips

Preheat oven to 375.  Mix together butter, sugar, vanilla, and egg until creamy.  Stir in Bisquick by cupful.  Add chocolate chips.  Drop by rounded teaspoons onto an ungreased cookie sheet and bake for 8-10 minutes or until golden brown around the edges.  Eat them alllll up!

So good!  Now today I am back at it again, but making some more traditional Christmas cookies for my family.  The no bake Buckeye Balls and Bird’s Nests are most definitely on the list!  If you get a little time, do some baking and cheer up during finals 🙂
